Crepe Batter


Ingredients:

1 cup unbleached all-purpose flour

1 tsp salt

2 eggs

1 cup milk

1 tbsp melted unsalted butter

1 tsp vanilla paste

2 tbsp sugar

Cooking spray

Instructions:

Sift the flour, salt into a bowl. Add the milk a little at a time rotating between the eggs. Add in the vanilla, sugar and butter. Cover with plastic and refrigerate for 1 hour. Over med-high heat lightly coat the skillet with cooking spray and pour 1 ladle of the batter on the hot skillet. Move the skillet in circular motions until the batter has consumed the entire bottom of the skillet. Brown and flip to the other side until cooked. Remove from the heat to cool. Repeat until all the crepes are finished. Fill, or top with any ingredient you like. They are delicious stuffed with shrimp or topped with strawberries and whipped cream.

Yields: 12-16 crepes
