Preheat oven to 400 degrees
2 cups all-purpose flour
3/4 cups cold buttermilk
1 tsp baking soda
1 tsp baking powder
1/4 tsp iodine salt
5 tbsp cold Crisco shortening
1 stick of unsalted butter, or sweet Irish butter
Combine all ingredients in a medium bowl. Dough should be a little wet. On a lightly floured surface, roll out dough to 1.5 inches thick and cut with a biscuit cutter. Place each biscuit on a lightly greased baking sheet. Bake 12 to 15 minutes or until biscuits are golden brown. Remove from oven and brush with melted unsalted or sweet butter. Serve with your favorite jam, jelly, preserve or compote. One word, “YUMMY!!!!”
